Tannins are a class of water-soluble phenolic compounds with a molecular weight between 500-3000 Da. They are widely distributed in the plant kingdom, an important secondary metabolite, and the most abundant class of plant phenolic substances after lignin, with antioxidant, moisturizing, and antiseptic properties. Tannin compounds reduce phosphomolybdic acid to a blue compound in an alkaline solution, and the absorbance is measured at 650nm, with the depth of blue being proportional to the content of tannins.
