Product description
Tannase, also known as tannase acyl hydrolase (EC 3.1.1.20), can hydrolyze ester bonds and phenolic carboxylic acid bonds in gallotannins, producing gallic acid and glucose. Tannase has a wide distribution and many applications; its study and application have penetrated into food processing, feed processing, cosmetic production, and leather manufacturing processes. The determination of tannase uses the rhodanine method, which uses propyl gallate (PG) as the substrate. Tannase decomposes propyl gallate (PG) to produce gallic acid, which can form a red complex with rhodanine under alkaline conditions. This complex has maximum absorption at 520nm, and the tannase activity can be calculated by measuring the change in A520.
