Sucrose is the primary form in which photosynthetic products from leaves are transported to various organs. Sucrose synthase (Sucrose Synthase, EC 2.4.1.13) is a bi-directional enzyme that can catalyze both sucrose synthesis and degradation and is one of the key enzymes in sucrose metabolism. Studying the activity of SS-I in the degradation direction is significant for sucrose degradation and starch synthesis in plants. SS-I catalyzes sucrose and UDP to produce free fructose and UDPG, and the content of fructose is measured at 540nm using the 3,5-dinitrosalicylic acid method to reflect the enzyme activity.
