Sucrose phosphorylase (EC2.4.1.7) is primarily found in microorganisms and plants and is a glucosyl transferase that catalyzes the transfer of glucose to fructose, xylose, galactose, and rhamnose, synthesizing the corresponding glucosyl oligosaccharides. It has a wide range of applications in the food, cosmetic, and pharmaceutical industries. This kit provides a simple, sensitive, and rapid determination method: sucrose phosphorylase uses phosphate as an acceptor to catalyze the production of 1-phosphoglucopyranose, which under the action of a corresponding enzyme mixture reduces NADP+ to NADPH, and then reacts with a specific color reagent to produce a yellow substance with maximum absorption at 450nm, from which the activity of sucrose phosphorylase (SP) can be calculated.
