Starch branching enzyme (SBE, EC 2.4.1.18) is one of the key enzymes involved in the synthesis of branched starch and is significant in starch biosynthesis, the selection of high-quality crop varieties, and the study of quality genetic improvement. SBE can reduce substrate levels, thereby decreasing the blue complex formed by the substrate and iodine color reagent, which has the maximum absorption peak at 660nm. The percentage decrease in absorbance within a certain time can reflect the activity of SBE.
