Pectin is a major component of the primary cell wall and middle lamella, mainly in the form of protopectin, pectic acid methyl ester, and pectic acid, widely distributed in plant fruits, roots, and leaves. Pectin combines with cellulose and metal ions to form water-insoluble protopectin, which is converted to soluble pectin during the maturation process of fruits and vegetables, causing the fruit tissue to soften and the hardness to decrease. This kit first extracts soluble pectin (WSP) and uses the carbazole colorimetric method to determine the soluble pectin content. Pectin is hydrolyzed to galacturonic acid, which undergoes a condensation reaction with carbazole in sulfuric acid solution to form a purple-red substance, with a maximum absorption peak at 530nm, the color depth of which is proportional to the pectin content, thus obtaining the content of soluble pectin.
