Soil polyphenol oxidase (PPO) is a class of oxidoreductases with copper and manganese as active centers, mainly derived from soil microorganisms, plant root exudates, and enzymes released from the decomposition of animal and plant residues. It can oxidize aromatic compounds in soil into quinones, which react with proteins, amino acids, sugars, minerals, and other substances in the soil to form organic matter and pigments of varying molecular weights, completing the soil aromatic compound cycle and can also be used for soil environmental remediation. Soil polyphenol oxidase can catalyze the substrate L-dopa to produce red quinone substances, and the colored product is detected at 475nm as the characteristic light absorption wavelength. By measurement, the activity of soil polyphenol oxidase can be calculated.
