Phytase (EC 3.1.3.8) is a general term for enzymes that catalyze the hydrolysis of phytic acid and its salts into inositol and phosphate (salts), belonging to phosphomonoesterase. It can convert phytic acid and its salts in food and feed into available phosphorus for organisms, reduce phosphorus content in feces, alleviate environmental pollution, and improve the absorption and utilization of nutrients, thus having a very broad research and application value. Under certain temperature and pH conditions, soil phytase hydrolyzes substrate sodium phytate to produce inorganic phosphorus and inositol derivatives. Inorganic phosphorus reacts with ammonium molybdate to form a blue complex in an acidic environment. By detecting the generation rate of the colored substance at 700nm, the activity of phytase can be calculated.
