Proteins are not only important components of organisms but also play significant roles in life activities. Oxidation of protein amino acid side chains can lead to the accumulation of carbonyl products. Therefore, protein carbonylation is widely used to evaluate the degree of oxidation in various biological organisms, and the detection of this indicator is of great practical significance. Oxidized protein carbonyls can react with 2,4-dinitrophenylhydrazine (DNPH) to form red-brown precipitates of 2,4-dinitrophenylhydrazones, which can then be dissolved with guanidine hydrochloride and detected at 370nm to obtain the protein carbonyl content.
