Polyphenol oxidase (PPO, EC 1.10.3.1), also known as tyrosinase, catecholase, or phenolase, is a widely distributed copper-containing oxidase found in plants, fungi, and insects. After mechanical damage or pathogen infection, PPO catalyzes the oxidation of phenols with O2 to form quinones, leading to tissue browning, which aids in damage recovery, prevents or reduces infection, and enhances disease resistance. It is closely related to fruit and vegetable processing, storage, tea quality, and tissue culture. PPO, a copper-containing oxidase, catalyzes the production of quinones from catechols, which have characteristic light absorption at 420nm.
