Pectinases are a group of enzymes that break down pectin, mainly including polygalacturonase (PG), pectate lyase (PL), pectin methylesterase (PME), and protopectinase. The main enzyme involved in the storage process is PG. This enzyme has high research value in the fields of food preservation and plant disease resistance. Pectin, under the action of polygalacturonase (PG), can hydrolyze to produce galacturonic acid with a reducing aldehyde group. It reacts with DNS reagent to form a reddish-brown substance, which has a characteristic absorption peak at 540nm. By measuring the change in absorbance at 540nm, the activity of polygalacturonase can be calculated.
