Pectate lyase (transeliminase, EC 4.2.2.10) is a type of pectinase that breaks down pectin polymers through trans-elimination. It is mainly derived from microorganisms and can increase the juice yield of fruits, and has potential application value in reducing environmental pollution. Pectate lyase (PL) acts on the α-1,4 glycosidic bonds in pectin to produce unsaturated oligogalacturonic acids with unsaturated bonds between C4 and C5 at the reducing end, which have a characteristic absorption peak at 235nm.
