Ornithine transaminase (OAT, EC 2.6.1.13) is a key enzyme in the synthesis of proline from ornithine and plays a crucial role in plants' adaptation to stress. Ornithine transaminase (OAT) catalyzes the deamination of ornithine in the presence of substrate ornithine and α-ketoglutarate, accompanied by the oxidation of NADH. By detecting the decrease in absorbance of NADH at 340nm, the enzyme activity of ornithine transaminase can be calculated.
