Limonin is a triterpenoid plant secondary metabolite, mainly found in Rutaceae and Meliaceae plants. It is also the main reason for the bitter taste in citrus fruits, usually present in higher concentrations in the fruits and seeds of the Citrus genus, and has certain anti-cancer and anti-viral effects as well as other beneficial biological activities. Limonin forms a stable red complex with Ehrlich's reagent, and its absorbance OD value can be measured, with the color depth being proportional to the concentration of limonin.
