Glutamic acid is widely present in animals, plants, microorganisms, and cultured cells. It is not only one of the 20 amino acids that make up proteins but also a key molecule in cellular metabolism. In addition, glutamic acid is the most abundant fast excitatory neurotransmitter in the mammalian nervous system and is found in various foods, where it is used as a flavor enhancer in the food industry. This kit uses glutamate dehydrogenase to specifically act on glutamic acid, converting NAD+ to NADH, and calculates the content of glutamic acid based on the increase of NADH at 340nm.
