Feruloyl Esterase (FAE, EC 3.1.1.73), also known as cinnamoyl esterase or cinnamic acid hydrolase, is an extracellular carboxyl esterase that primarily degrades ester bonds between arabinose or galactose or hydroxycinnamic acids in cell wall polysaccharides or pectin. Feruloyl Esterase (FAE) catalyzes the decomposition of the substrate methyl ferulate, and the enzyme activity can be determined by measuring the decrease in absorbance at 340nm. The reaction equation is: feruloyl-polysaccharide + H2O = ferulate + polysaccharide.
