Fatty Acid Synthase (FAS, EC 2.3.1.85) is a key enzyme in fatty acid synthesis, catalyzing the formation of long-chain fatty acids from acetyl-CoA and malonyl-CoA. FAS is widely expressed in various tissue cells and is abundantly expressed in the liver, kidney, brain, lungs, mammary glands, and adipose tissues of mammals. FAS catalyzes the conversion of acetyl-CoA, malonyl-CoA, and NADPH into long-chain fatty acids and NADP+. NADPH has an absorption peak at 340nm. By measuring the decrease in light absorption at 340nm, the activity of FAS can be calculated.
