Endo-β-1,4-glucanase (EC3.2.1.4) is found in bacteria, fungi, and animals, and is one of the components of the cellulase system. This enzyme randomly hydrolyzes β-1,4-glycosidic bonds, truncating amorphous long-chain cellulose molecules and breaking them down into various types of reducing sugars such as glucose, cellobiose, and cellotriose. Under alkaline conditions, the produced reducing sugars react with 3,5-dinitrosalicylic acid to form a brown-red substance, which has the maximum absorption peak at 540nm, thus determining the enzyme activity of endo-β-1,4-glucanase.
