Endo-β-1,4-glucanase, also known as cellobiohydrolase (CBH) (EC 3.2.1.91), is found in bacteria, fungi, and animals and is one of the components of the cellulase system. This enzyme acts on β-1,4-glycosidic bonds, releasing a cellobiose (reducing sugar) molecule each time. Under alkaline conditions, the produced reducing sugars react with 3,5-dinitrosalicylic acid to form a brown-red substance, which has a maximum absorption peak at 540nm. The enzyme activity of endo-β-1,4-glucanase can be determined accordingly.
