Dehydroascorbic acid is reduced to reduced ascorbic acid, which then reduces ferric ions to ferrous ions. Ferrous ions react with 4,7-Diphenyl-1,10-phenanthroline to form a red complex with a characteristic absorption peak at 534nm, from which the total ascorbic acid content is calculated. By directly measuring the sample, the content of reduced ascorbic acid is obtained. The difference between total ascorbic acid content and reduced ascorbic acid content gives the content of dehydroascorbic acid in the sample.
