Choline acetyltransferase (ChAT, EC 2.3.1.6) is the synthetic enzyme of acetylcholine (Ach) and regulates the metabolism of Ach. Ach is the main excitatory neurotransmitter that regulates the movement of esophageal smooth muscle. The determination of ChAT is based on the substrates acetyl-CoA and choline. Under the action of ChAT, acetylcholine and CoA are generated, and the product reacts with the color reagent to have an absorption peak at 412nm, thereby calculating the activity of ChAT. The enzyme-catalyzed reaction equation is: acetyl-CoA + choline = CoA + O-acetylcholine.
