Fructose is a common ketose and is an isomer of glucose. This kit provides a quantitative, rapid, simple, and sensitive method for detecting fructose content. Fructose is converted to glucose under the action of specific enzymes, and glucose is then reduced by enzymes such as hexokinase, causing an increase in NADPH, which is detected at 340nm to calculate the fructose content.
