β-Mannanase (EC 3.2.1.78) is widely present in animals, plants, and microorganisms. Used in the feed industry, it not only eliminates the anti-nutritional factor mannan in feed, improving feed utilization, but also promotes the proliferation of beneficial bacteria and enhances animal immune function. β-Mannanase hydrolyzes mannans to produce oligosaccharides and monosaccharides. Reducing oligosaccharides and monosaccharides react with 3,5-dinitrosalicylic acid (DNS reagent) in a boiling water bath to produce a colored reaction. The colored substance has a maximum absorption peak at 540nm. The enzyme activity can be calculated by determining the amount of reducing sugar produced.
