β-1,3-1,4-Glucanase (also known as lichenase; EC 3.2.1.73) is an important class of hydrolases that can hydrolyze β-1,3-1,4-glucans in grains, and it has significant application value in the fields of food, feed, and textiles. β-1,3-1,4-Glucanase hydrolyzes the substrate glucan to produce reducing sugars. The amount of reducing sugars is determined using 3,5-dinitrosalicylic acid, and the absorbance at 540nm is read to determine the activity of β-1,3-1,4-glucanase.
