Ascorbate peroxidase (APX; EC 1.11.1.11), also known as vitamin C peroxidase, is an important antioxidant enzyme in plant cells that defends against external oxidative stress and the plant's own reactive oxygen species metabolism, playing a key role in reducing the oxidative damage to plant cells caused by H2O2. APX first forms an intermediate complex with H2O2, which then oxidizes AsA, thus APX has a certain negative correlation with AsA. The enzyme activity is calculated by measuring the oxidation rate of AsA.
