Anthocyanidin reductase (ANR) is involved in regulating the content level of anthocyanins and the formation of proanthocyanidins, and is one of the key enzymes in the biosynthesis process of proanthocyanidin monomers, playing an important regulatory role in the accumulation of anthocyanins. Anthocyanidin reductase (ANR) reduces delphinidin to epigallocatechin and NADP+ in the presence of NADPH, and the enzyme activity of anthocyanidin reductase (ANR) can be determined by detecting the decrease rate of absorbance at 340nm in the reaction system.
