Xylanases are widely distributed in nature and can be obtained from animals, plants, and microorganisms. They are a group of enzymes that degrade xylan into oligosaccharides and xylose, also known as pentosanases or hemicellulases, and are widely used in brewing and feed industries. Alkaline xylanase (BAX) hydrolyzes xylan into reducing oligosaccharides and monosaccharides in an alkaline environment, and further reacts with 3,5-dinitrosalicylic acid to produce a color reaction under boiling water bath conditions, with a characteristic absorption peak at 540nm. The depth of the color of the reaction liquid is proportional to the amount of reducing sugars produced by enzymatic hydrolysis. By measuring the increase in absorbance at 540nm of the reaction liquid, the activity of BAX can be calculated.
