Alcohol acyltransferase (AAT, EC 2.3.1.84) is a key enzyme in the biosynthesis of ester compounds, and studies have shown that its activity is positively correlated with the content of ester compounds in fruits. AAT catalyzes the reaction between acetyl CoA and alcohols to produce ester compounds and CoA. The generated CoA has reducing properties and can react with DTNB to form a yellow substance, which has a characteristic absorption peak at 412nm, allowing the determination of AAT enzyme activity. Reaction: acetyl-CoA + a primary alcohol = CoA + an acetyl ester
