α-Mannosidase (EC 3.2.1.24, α-Man) is one of the key enzymes involved in the processing of N-glycans in plants. It is a crucial glycosidase in the metabolism of glycoproteins in the plant cell wall and plays an important role in the growth of meristematic tissues, the ripening and softening of fruits, and the germination of seeds. α-Mannosidase (α-Man) catalyzes the production of p-nitrophenol (PNP) from p-nitrophenyl-α-D-mannoside, which has a characteristic absorption peak at 405nm. The enzyme activity can be calculated by measuring the increase in absorbance at 405nm.
