α-Glucosidase (α-GC, EC 3.2.1.20), also known as α-D-glucoside hydrolase, is widely distributed in animals, plants, and microorganisms. It is a class of enzymes that can catalyze the hydrolysis of α-1,4-glycosidic bonds from the non-reducing end of substrates containing α-glycosidic bonds, releasing glucose, or transferring the free glucose residue to another sugar substrate to form α-1,6-glycosidic bonds, thus obtaining oligoisomaltosaccharides or sugar esters, and glycopeptides. α-Glucosidase is closely related to starch and glycogen metabolism and plays an important role in maintaining the normal physiological functions of organisms. α-Glucosidase can hydrolyze p-nitrophenyl-α-D-glucopyranoside to produce p-nitrophenol, which has a maximum absorption peak at 405nm. The increase in absorbance rate is used to calculate α-glucosidase activity.
