Product description
Amylases catalyze the hydrolysis of starch to produce reducing sugars, which is the primary reaction in the biological utilization of starch for carbohydrate metabolism. When the substrate concentration is known and in excess, iodine solution is added to combine with the undigested starch to form a blue complex. The depth of the blue color can be used to calculate the amount of digested starch, thereby determining the activity of α-amylase.
Additional Materials and Equipments Required
Visible spectrophotometer, 1mL glass cuvette (light path 1cm), constant temperature water bath, desktop centrifuge, pipette, mortar and pestle, and distilled water.
