6-Phospho-D-sorbitol dehydrogenase (S6PDH, EC 1.1.1.200), also known as aldose 6-phosphate reductase (A6PR), catalyzes the interconversion between D-sorbitol 6-phosphate and D-glucose 6-phosphate. Studies have found that this enzyme is widely distributed in plants such as apple leaves in the Rosaceae family and plays an important role in sorbitol synthesis. S6PDH catalyzes the reduction of D-glucose 6-phosphate and oxidizes reduced coenzyme II (NADPH). Therefore, by detecting the decrease in NADPH at 340nm, the enzyme activity of S6PDH can be determined. The reaction catalyzed by this enzyme is: D-sorbitol 6-phosphate + NADP+ = D-glucose 6-phosphate + NADPH + H+.
